Apple & Sultana Clafoutis (Baked custard pudding)
Instructions
Ingredients
40g (1½oz) plain white flour
450g (1lb) cooking apples
40g (1½oz) plain wholemeal flour (peeled, cored and thickly sliced)
50g (2oz) caster sugar
50g (2oz) dried fruit, e.g. sultanas, raisins
3 eggs, beaten
300ml semi skimmed milk
1 teaspoon mixed spice/ground cinnamon or allspice
Method
Pre-heat oven to 200°C or gas mark 6
Sift both flours into a large mixing bowl
Add half the caster sugar, half of the milk and all of the beaten egg. Blend the ingredients using a wooden spoon or whisk
Stir in the remaining milk and blend into a smooth batter
Put sliced apples and dried fruit into a shallow non-stick cake tin
Sprinkle over the spice
Pour in the batter
Bake in oven for 30-35 minutes until well risen and golden brown
Sprinkle over remaining sugar before serving and serve hot
This dish is traditionally made with cherries and it also works well with plums.
