Bacon and lentil salad

Ingredients

1 bunch spring onions
6 slices back bacon rashers
1 carrot
1 tin green lentils (in water)
2 sticks of celery
4 tablespoons of natural yoghurt
½ punnet cherry tomatoes
2 tablespoons of sweet Thai chilli sauce
½ iceberg/gem lettuce

Method

1. Preheat grill to medium heat
2. Grill bacon rashers for 10 minutes until cooked and then leave to cool. Once cool, remove fat from bacon and chop into small pieces
3. Wash vegetables and…
o thinly slice the spring onion
o peel and grate the carrot
o chop the celery (remove stringy bits)
o chop cherry tomatoes in half
o roughly chop lettuce leaves
4. Arrange the lettuce leaves on a serving plate
5. Open the tin of lentils, rinse and drain well
6. Mix together the spring onion, celery, cherry tomatoes, carrot and green lentils in a large bowl
7. Add the natural yoghurt and sweet thai chilli sauce and mix together with the salad items
8. Season well with black pepper
9. Ready to serve
