Baked apple and almond pudding

Servings: 9 small servings

Ingredients

3 Bramley (675g/1½lb) cooking apples (peeled, cored and thickly sliced)
1 tablespoon soft brown sugar
100g (4oz) margarine/ butter (at room temperature)
75g (3oz) caster sugar
2 large eggs (beaten)
100g (4oz) ground almonds

Method

Pre-heat the oven to 180°C or gas mark 4
Lightly grease a deep square baking tray with butter or margarine
Place the sliced apples in a saucepan with 2 tablespoons of water and the soft brown sugar. Gently cook on a low heat until the apple slices begin to soften (about 5 minutes). Remove apples into the greased baking tray
Using a wooden spoon beat together the butter or margarine with the sugar in a mixing bowl until light and fluffy
Add the beaten eggs gradually and beat well on each addition
Stir in the ground almonds
Spread the almond mixture on top of the apples and smooth over the top
Bake in the oven for 45 minutes until golden on top
Serve with natural yoghurt, custard or half fat crème fraiche
