Baked Stuffed peaches

Ingredients

4 peaches
4 ginger biscuits
4 teaspoons butter or margarine (softened)
1-2 tablespoons brown sugar

Method

1. Pre-heat oven at 180⁰C or gas mark 4
2. Halve the peaches and remove the stone. Using a teaspoon hollow out some of the flesh and place into a mixing bowl
3. Crush the ginger biscuits and add to the peach flesh along with the softened butter/ margarine and mix together
4. Stuff each peach with the crushed ginger biscuit mixture
5. Place the peaches in a lightly buttered oven-proof dish and sprinkle with the brown sugar
6. Bake in oven for 25 minutes until golden and soft
