Breakfast morning muffins

Ingredients
170g dried apricots, coarsely chopped
1 teaspoon baking powder
170g unsweetened muesli
250ml unsweetened apple juice
250g self-raising flour
3 tablespoons vegetable oil
100ml honey
1 large egg
Method
1. Preheat oven to 190˚C/gas mark 5.
2. Put the apricots, muesli, flour and baking powder in a large mixing bowl and stir.
3. In a separate bowl, mix the apple juice, oil, honey and egg.
4. Fold into the dry ingredients, do not over mix.
5. Spoon the mixture into the paper muffin cases.
6. Bake in a preheated oven at 190˚ gas mark 5 for 20 minutes, until golden and risen.
7. Remove from the oven and serve immediately.
