Fresh Fruit Trifle

Ingredients
3 tablespoons custard powder
10-12 strawberries
1 pint skimmed milk
Tinned fruit of your choice
1 Madeira cake
1 small pot of whipping cream *
2 bananas
1 chocolate flake (optional)
* For an alternative to cream: use equal quantities of half fat crème fraiche & plain low fat fromage frais or equal quantities of low fat Greek yoghurt & whipping cream
Method
1. Make up approximately 1 pint of custard:
o Mix 4 tablespoons of skimmed milk to the custard powder to form a paste
o Heat up the remaining milk to a gentle boil then add to custard paste
o Mix well, then leave aside to cool completely
2. Meanwhile cut the Madeira cake into thin slices and arrange at the bottom of a large bowl. Then slice the bananas and strawberries; whip the cream with a whisk
3. Drain the tinned fruit and place on top of cake
4. Spoon on top the custard
5. Layer the sliced bananas and strawberries on top, leaving aside a few strawberries
6. Layer on top the whipped cream, decorate on top with remaining strawberry slices and flaked chocolate
