Hot Beany Potato Filling

Ingredients

Pulses
For example:

Chickpeas
Flageolet beans
Black-eyed beans
Cannellini beans

Seasoning
For example:

Mixed herbs
Worcestershire sauce
Paprika
Chilli powder

Meat or fish For example:
Tinned fish
Quorn pieces
Bacon
Chicken

Vegetables
For example:

Mushrooms
Peppers
Courgettes
Sweetcorn
Aubergine

Method

1. Preheat oven to 200ºC/gas mark 6
2. Scrub potatoes and prick all over with a fork
3. Bake potatoes in oven for 1-1½ hours until tender (to speed up cooking process microwave potatoes for several minutes before oven baking)
4. Heat oil in pan
5. Add garlic and onions and cook for 2-3 minutes
6. Add any two vegetables and cook for 4-5 minutes
7. Stir in the baked beans, tomatoes, any pulses and seasoning of your choice
8. Bring to the boil, stirring occasionally then reduce heat
9. Add one other option and cook for a further 5 minutes. If using bacon, chop it up and fry with the onions and garlic first. You may find that you need no further seasoning as the bacon is already very salty
10. Top jacket potatoes with filling and serve with salad

This is a quick and easy recipe. Try it with rice or pasta too. Alternatively, transfer the bean mixture into an ovenproof dish and top with mashed potato and grated cheese. Bake in oven until cheese has melted and you have one tasty beany pie!
