Spicy Roast Chicken


Preparation Time: 5 minutes preparation. 30 minutes marinating
Cooking Time: 40 minutes
Servings: 4


2 garlic cloves, peeled and minced to a paste
2.5cm (1 inch) piece of root ginger, peeled and
minced to a paste
½ teaspoon salt
½ teaspoon turmeric powder
1 teaspoon ground coriander
1 teaspoon hot paprika
2 teaspoons red chilli powder (or to taste)
2 tablespoons tomato puree
Juice of 1 lemon
1 tablespoon olive oil
8 chicken drumsticks


1. Mix together all the ingredients in a bowl except
for the chicken.
2. Cut off any excess skin and make a few slashes in each
chicken drumstick.
3. Marinate the chicken drumsticks in the spice mixture
for at least 30 minutes.
4. When ready to roast, place the drumsticks onto a large
baking tray lined with foil. Roast in a pre-heated
oven 200°C (gas mark 6/ fan oven 190°C) for 35-40
minutes, turning over once halfway. The skin should
be crisp and browned and the chicken cooked through.
5. Serve with fresh salad.
